Pico De Gallo
I’ve taken this Salsa (it’s actually a pico de gallo) to pot lucks and parties and everyone raves about it.
1 red onion
4 cloves garlic (or more if you like it super garlicky)
Jalepano peppers to taste
A Medium sized lime.
Finely dice tomatoes, cucumber, onion and peppers making sure to remove the pith and seeds if you don’t want it to be too spicy.
Finely dice or Grate the garlic. If you have a garlic press, this would be a great use for it.
Mix all ingredients together with a pinch of salt and a pinch of pepper to taste. Squeeze the juice of 1 lime over the top, mix again and serve with tortilla chips or use as an accompaniment to your favourite mexican dish.
